Fact is there's a very simple, if slightly uncomfortable to some, reason why most of the popular models for just about all of the largest art-nude sites out there all seem to fall into the 18-25 (and more specifically the 18-21) age category, and a lot of them seem to have very similar physical characteristics, whether it's a slender or athletic build, long-ish hair, shaved pussy, small-medium breasts, petite or average height, minimal or no obvious piercings or tattoos, it all simply boils down to the fact that carefully shot photosets of young-looking (and even though a model might actually be 23, 24, 25, or older, I do mean 'young' as in appearing to be of borderline legal age) models are simply among the most popular types of photosets that any site can publish; this is something the adult industry has full well known for decades at this point (but mostly won't publicly acknowledge), just as most viewers, if they were completely open and honest about it, also know this to be a thing, or at least know it to be something they kinda suspected was true.
Thus when you come to AI generated art that's based on those popular sources and that kind of popular material, while also using certain leading prompts, it only stands to reason that the 'models' in that generated art are then going to have that 'jailbait and anorexic looking' appearance.

tl;dr
Basically, the adult industry will always provide what its viewership wants and will regularly pay for, thus for the longest time now young-looking 'teen' models (and there's obviously the long-standing meme that 'teen' in the porn industry means any female model from 18 up to the age of about 30) are still far and away the most popular category of model particularly for photographic content. This fact now also applies to the AI generated adult material scene.
